1. Buy quality beef. 2. Start early. 3. Remove the rib bones. 4. Keep the flavors simple. 5. Temper the meat before cooking. 6. Use a remote-probe thermometer. 7. Cook it to medium-rare. 8. Don't skip the 30-minute rest! 9. Slice as needed.
Step 1: Season the meat a few days in advance with plenty of kosher salt.
Step 2: Setup your smoker for indirect cooking at 250° F.
Step 3: Smoke for about 3 hours, or until the internal temperature reaches a target pull temp of 118° F, for medium-rare (the temp will continue to rise as it rests).
Step 4: Pull the roast out of the smoker and rest for 30 minutes while you heat your grill to high.
Step 5: Sear on all sides for about 1 to 2 minutes per side.
Step 6: Slice and serve.
Tip: Only slice what you need at the time to keep the meat juicy.
