Cubes of sweet potato roasted until crispy and caramelized. This easy oven-roasted recipe turns the humble sweet potato into a crave-worthy side. With just a bit of seasoning, the natural sweetness shines through.
2lbssweet potatoes (about 2 large)peeled and cut into 1" cubes
2tablespoonsmelted butter(or olive oil)
3tablespoonsmaple syrup(optional)
1/2teaspooncinnamon
1/2teaspoonthyme
salt & pepper to taste
Instructions
Preheat your oven to 400° F (204° C) with the rack positioned at the bottom of the oven to promote browning.
Combine all the ingredients in a medium bowl. You can do this directly on the sheet pan, but it's easier in a bowl.
Spread evenly onto a parchment paper lined half-sheet pan or 13x9" baking dish, giving the cubes space to brown.
Place in the oven and roast for 35 to 45 minutes, or until the sweet potatoes are softened and getting crisp. Stir halfway through to promote even browning. Taste and season with more salt as needed.
Notes
Can also be made in an air fryer or you can use the convection setting if your oven has one. Just be aware that the cook time will likely be less than in the recipe.
Best served hot. Can be reheated in the microwave, but they won't be as crispy.
Parmesan cheese can be sprinkled on at the end for a cheesy alternative.
