Slice the cauliflower to create pieces of "toast." Slice towards the middle and use a sharp knife using your second hand to hold the cauliflower together.
Place the cauliflower slices on a parchment-lined baking sheet (that can fit in the toaster oven).
Drizzle a little olive oil on top and toast for about 10 minutes, or until it is knife tender.
Top the cauliflower toast with a fried egg and the greens.
