1/2cuppanko breadcrumbsor 1/4 cup Italian breadcrumbs
2tspDiamond kosher saltor 1 1/2 tsp Morton kosher salt
1/2tspgarlic powder
1/2tsponion powder
1/2tspsmoked paprika
1/4tspblack pepper
1/2tspfresh thymeor dried
1tspchopped Italian parsley
1tspWorcestershire sauce
Canola oil for brushing
1/2cupBBQ sauce
Wood chips or pellets for smoking
Instructions
In a large bowl, whisk the egg. Add breadcrumbs, herbs, spices, and seasonings.
Gently fold in ground turkey using a spatula or gloved hands, being careful not to over-mix.
Form 1 1/2 tablespoon-sized meatballs using an ice cream scoop or hands. Place in a lightly greased cast iron skillet, disposable aluminum pan or a sheet of heavy-duty foil.
If time allows, chill meatballs for 1 hour before cooking.
Preheat smoker, grill, or oven to 325-350°F.
Brush meatballs lightly with canola oil to promote browning.
Cook for 15-20 minutes, or until internal temperature reaches 165°F.
Brush with BBQ sauce during the last few minutes of cooking.
Notes
Recipe yields about 18 meatballs. Double for approximately 36.
Test seasoning by cooking a small portion in a skillet before forming all meatballs.
For bite-sized appetizers, make smaller meatballs; for entrees, make larger ones. Adjust cooking time accordingly.
