Cauliflower Veggie “Toast”

  • 1 head Cauliflower
  • Extra Virgin Olive Oil
  • Salt & Freshly Ground Pepper
  • Fried or Poached Egg
  • Spinach or Arugula


  • Preheat your toaster oven to 450 degrees.
  • Slice the cauliflower to create pieces of "toast." Slice towards the middle and use a sharp knife using your second hand to hold the cauliflower together.
  • Place the cauliflower slices on a parchment-lined baking sheet (that can fit in the toaster oven).
  • Drizzle a little olive oil on top and toast for about 10 minutes, or until it is knife tender.
  • Top the cauliflower toast with a fried egg and the greens.
