Instructions
Cook your steak: Season, sear, rest and slice thin against the grain.
Prepare your mayo, sauces, and any additional ingredients.
To make the steak/burger sauce: Combine equal parts mustard, ketchup and mayo.
To make the caramelized onions: Peel and slice the onions thickly. Heat oil over medium heat (or use the pan's fat from the steak) and cook the onion slices for about 5 minutes per side, or until caramelized and slightly softened. Season with salt.
Toast the bread in the skillet to brown slightly and crisp.
Melt the cheese on the sliced steak: Place the cheese on the hot steak to allow it to melt. Optionally, return it to the skillet or place it under the broiler for melting.
