There’s the Brisket Sandwich, and then there’s the Brisket Grilled Cheese. First the crunch, then the ooey gooey melty cheeses (all the variety you want) and that super tender, smoky brisket. It’s heavenly, even beyond our favorite perfect grilled cheese.

This is a grilled cheese for grown-ups, and you need one in your life right about now. And it turns out the kids will love it too (I found out from experience).

What You’ll Need

  • Leftover Brisket (preferably smoked) – Cubed, shredded or sliced. I prefer cubed because it allows the cheese to easily melt between it.
  • Bread – French, sourdough, white or brioche will all work great. I love how crunchy French and sourdough get, so that’s my preference.
  • Cheese – You want it to be super melty cheese. Use one or a combination of cheddar, Monterey jack, gruyere or even add some smoked gouda. The cheese can be slices or shredded, which is even easier to melt.
  • BBQ Sauce – Just a little goes a long way. Homemade is always great, but you can use whatever you have on hand.
  • Mayo, Butter or a Combo – If you have never tried a thin layer of mayonnaise to make the perfect grilled cheese, you are in for a surprise. It works so well and is so easy to spread.

Alternates and Substitutions

  • This grilled cheese will also work great with smoked chuck, pulled pork, brisket burnt ends or smoked pork belly.
  • Add sliced tomato – If it’s peak tomato season, a slice or two of a juicy-ripe tomato will be a great addition.
  • Red onion – A little thinly sliced red onion is also great in this mix.

Serving Suggestions

While this sandwich is really all you need, a few sides will definitely make the meal. I love it with a fresh arugula salad, potato salad, homemade potato chips and coleslaw. Whatever else you have leftover from the brisket cook is going to go great.

Ingredients

  • 3 ounces leftover brisket (cubed, sliced or shredded)
  • 1 to 2 tbsp mayo (or butter)
  • 2 slices bread (French, sourdough, white or brioche)
  • 2 ounces cheese (cheddar, Monterey jack, gruyere, or gouda)
  • 1-2 tsp BBQ sauce

optional:

  • Thinly sliced red onion

Instructions

  • Preheat a heavy-bottom skillet or griddle over medium heat. Crisp up the brisket just until it is warmed through.
  • Spread a light layer of mayo (or butter) on the outside of each slice of bread.
  • Layer half of the cheese, brisket, BBQ sauce and then the remaining cheese again.
  • Transfer the sandwich to the skillet and griddle it low and slow, flipping after 2 to 3 minutes, when the cheese is all melted and the bread is golden.
  • Slice the grilled cheese on the diagonal and enjoy!

Notes

  • This recipe is for one sandwich but can be scaled up.
  • Mayo works so well for grilled cheese because of its high-fat content, neutral flavor and how easy it is to spread on the bread without damaging it. This allows it to create a crispy, evenly golden crust on the bread while also acting as a barrier to prevent the bread from sticking. 
  • This grilled cheese would also be delicious with pulled pork, pork belly or brisket burnt ends.

    Made this with leftover brisket from your brisket recipe. We smoked over the weekend and had plenty of leftovers. I was skeptical about the mayo but WOW. Came out just like a restaurant-quality grilled cheese. Great recipe. Thanks for all the tips!
